Labneh Pomegranate Dip | GRF, V

If there was a contest for quickest, easiest, and tastiest appetizer – this would win. It is much more assembly then anything else. But it is so tasty and addicting and everyone will love you. Which is the goal when you are feeding people.

What I use

  • 1 cup labneh (Labneh is just strained yogurt. If you can’t find it in stores, buy some good full fat yogurt and let it sit in a cheese cloth with few pinches of salt till all the liquid drains out and it because much thicker and tart. This takes the better part of a day so keep that in mind.)
  • 1/2 cup ricotta cheese
  • 1/4 cup pomegranates
  • 2 tsp za’atar spice blend
  • 1/4 cup pine nuts, lightly toasted
  • 1 bunch of fresh mint
  • Drizzle of pomegranate molasses
  • Zest of 1/2 lemon

What I do

  1. Fold together the ricotta, labneh, and lemon zest till completely mixed. Spread out evenly on your favourite serving dish (about 1 inch thick)
  2. In the center, top with all the pomegranates and toasted pine nuts, leaving a 1 inch boarder of the spread around the outside
  3. Sprinkle the visible labneh/ricotta mixture with the za’atar spice mixture
  4. Drizzle with pomegranate molasses (don’t go to heavy with this, 1-2 tsp is plenty. It is an intense flavor) and top with fresh mint leaves
  5. Serve with pita, crostini, or crackers
